Cheesey, delicious and perfect to use up those leftover keto-friendly veggies. The perfect Keto, low-carb and sugar-free side dish.
1 cup grated cheese (I have used Colby)
100g full-fat cream cheese
1/4 cup grated parmesan cheese
1/2 cup water
750 grams of frozen keto-friendly veggies
salt & pepper to taste
Preheat oven to 200c bake or fan bake.
Place frozen keto-friendly veggies into a microwave-safe large bowl and cook for about 6 minutes. The veggies need to be firm but not fully cooked.
Once keto-friendly veggies are firm, drain the water with a sieve and place the veggies into a dish.
Blitz the cream cheese, water and 1/2 a cup of the grated cheese in a kitchen Wizz or Nutri bullet. (the rest of the grated cheese is for later).
Tip the blitzed cream cheese, water and grated cheese over the keto-friendly veggies. The blitzed mixture might seem thick however it will liquify when cooking.
Sprinkle the rest of the grated and parmesan cheese over the Keto-friendly veggies and blitzed mixture.
Use salt and pepper to taste.
Place the dish into the oven and bake for 15 minutes.
This cheesy veggie bake is a regular in our whare. It is a quick, easy and fabulous way to get veggies into your diet. Even the kids will love it!
