This cheesy veggie bake is a regular in our whare. It is a quick, easy and fabulous way to get veggies into your diet. Even the kids will love it!






If you are not keen on veggies this is the perfect recipe to cover up the taste!



I love the full cheesy flavour of this veggie bake. It has been a regular feature of my 30kg weight-loss menu. I prefer to use frozen veggies as they are more accessible all year and are cheaper than fresh vegetables. The taste is not compromised by using frozen veggies.

The flavour seems to deepen and is even better the next day.


Cheesy Veggie Bake


Ingredients:


  • 1 cup grated cheese (I have used Colby)

  • 100g full-fat cream cheese

  • 1/4 cup grated parmesan cheese

  • 1/2 cup water

  • 750 grams of frozen keto-friendly veggies

  • salt & pepper to taste


Method:


  1. Preheat oven to 200c bake or fan bake.

  2. Place frozen keto-friendly veggies into a microwave-safe large bowl and cook for about 6 minutes. The veggies need to be firm but not fully cooked.

  3. Once keto-friendly veggies are firm, drain the water with a sieve and place the veggies into a dish.

  4. Blitz the cream cheese, water and 1/2 a cup of the grated cheese in a kitchen Wizz or Nutri bullet. (the rest of the grated cheese is for later).

  5. Tip the blitzed cream cheese, water and grated cheese over the keto-friendly veggies. The blitzed mixture might seem thick however it will liquify when cooking.

  6. Sprinkle the rest of the grated and parmesan cheese over the Keto-friendly veggies and blitzed mixture.

  7. Use salt and pepper to taste.

  8. Place the dish into the oven and bake for 15 minutes.
