Chocolate and Peanut Butter Bites

I am pleased to say that I have given these little beauties a taste test! They honestly melt in your mouth.

One of the best keto sweet treats I have tried!

Do you find yourself eating perfect keto all day long to then get to the evening and find you need something sweet??? Whip up a batch of these babies and keep them in the fridge.



Chocolate and Peanut Butter Bites


Ingredients:


You will be happy to know that there should be a little left over for you to taste test!!

  • 200g keto-friendly chocolate of your choice

  • 4T coconut oil

  • 2T peanut butter

  • 1/2C Keto-friendly powdered sugar (like icing sugar)


Method:


  1. Melt your keto-friendly chocolate and 2T coconut oil in the microwave. Alternatively, you could use your stovetop or melt over boiling water.

  2. Make sure that the keto-friendly chocolate and coconut oil is all melted and velvety smooth,

  3. Using a spoon or pourer, fill your mould or cupcakes a third of the way with your melted keto-friendly chocolate and coconut oil. You will use roughly half of your keto-friendly chocolate.

  4. Place your mould into the fridge and chill for 10 minutes or until it is solid.

  5. While you are chilling the Keto-friendly chocolate and coconut oil in the fridge, place the peanut butter and the rest of the coconut oil (2T) into a bowl and melt in the microwave. Alternatively, you could use your stovetop or melt over boiling water. it should be velvety smooth and quite runny.

  6. Mix in your keto-friendly powdered sugar, it should be the texture of biscuit dough (I know right, yummy)

  7. Take your mould with the keto-friendly chocolate and coconut oil out of the fridge and put it onto the bench.

  8. Top your peanut butter, coconut oil and keto-friendly powdered sugar mixture on top of the solid Keto-friendly chocolate. Your chocolate and peanut butter mixture should take up about 2/3 of your mould.

  9. Place your mould back into the fridge for about 15 minutes or until the mixture is solid.

  10. Take your mould out of the fridge. All your ingredients should be solid.

  11. Top the mould with the rest of your keto-friendly chocolate.

  12. Place the mould back into the fridge and chill until solid, about 15 minutes.

  13. Take out of the mould and place into a container. These should be kept in the fridge.


Rest assured you will not be disappointed. Don't forget that any leftovers are fair game!
