500g diced pork (or your chosen meat)
2c keto-friendly vegetables
1/4c Frenchies Keto Sweet and Sour Sauce
1/4c of parmesan cheese
1/2c almond meal
1/2 bag of Mr Hamfreys Himalayan Salt Pork Crackle
salt and pepper to taste
2 eggs
5T olive oil
recipe makes about 4 servings
Method
In a blender, mix parmesan cheese, almond meal and Pork Crackle. Should look like a fine crumb mixture.
Whisk your eggs and lightly coat the diced pork.
Place your crumb mixture into a container. Gently shake the diced pork, (that is now covered in the egg mixture) in the container with the crumb mixture. Make sure the lid is on tight! Your diced pork should now be crumbed.
Put your olive oil into a frying pan and heat the oil on high heat. You are now going to low-fry your crumbed pork. Once your oil is heated turn the heat to medium. Keep an eye on your frying as it can start to burn quickly.
Fry for about 10 minutes until it is golden brown.
Add your vegetables and cook for a further 10 minutes
Add Frenchies Sweet and Sour Sauce and coat all ingredients. Heat for about a minute.
