Keto Mexican Chicken Enchiladas

Cheesy and comforting, this recipe is to die for. Get great bang for your buck by using a frozen whole chicken. Or if pushed for time, try a cooked chicken.  This is a favourite in our whare. 

Keto Mexican Chicken Enchiladas

Low carb, Keto, sugar free recipe for fast and healthy weightloss


Makes 4 servings or 2 enchiladas for 4 people

  • 4 C of shredded cooked chicken

  • 2 Tbsp of olive oil or coconut oil

  • 1 packet of keto-friendly taco mix

  • 8 keto-friendly wraps

  • 4 Tbsp of tomato paste

  • 1 C of grated cheese


  1. Heat olive oil in a pan on a medium heat.

  2. Add cooked shredded chicken and Keto-friendly taco mix to the pan. Fry for about 5 minutes.

  3. Spoon the cooked shredded chicken and taco mixture onto the wraps. I like to do this individually and place each finished wrap onto an oven tray. We all have our preferred way to make wraps! I use two trays. One tray for the keto lovers and one tray for the carb lovers!

  4. Spoon the tomato paste on top of the finished wraps and spread so that there is a thin layer of tomato paste on your wraps.

  5. Sprinkle the grated cheese on top of your wraps.

  6. Place the oven trays into a preheated 180C oven and bake for 5-10 minutes. Watch as they transform into enchiladas!

  7. Top with sour cream and guacamole. Add a green salad or keto-friendly vegetables.

This is a delicious and comforting recipe that the entire Whanau can enjoy. Swap out the Keto-friendly wraps for non-keto wraps.
