Keto Pulled Pork

Juicy and tender with a touch of zing. This pulled pork recipe is delicious. Pork leg roasts are relatively cheap. The best recipes are budget-conscious meals and ones the whole Whanau will eat. I love to whip out my slow cooker! We have a joke in our Whare - when you see Mum pulling out the slow cooker, you know that meal will stretch the next few days. The Minions don't mind eating this several days in a row!

Keto low-carb recipe

Ingredients

This recipe makes eight servings.

  • 1.25 kg pork leg roast

  • 1 tsp of malt vinegar

  • half tsp of cumin powder

  • 4 tsp of smoked paprika

  • 3 tsp brown keto sweetener

  • 1.5 tsp of garlic powder

  • 1 tsp of onion powder

  • 2 Tbsp sugarfree maple syrup

  • half C of water

Method

  1. Turn your slow cooker to high for seven hours.

  2. Add all ingredients except the pork into the slow cooker and mix into a paste.

  3. Add the pork roast to the slow cooker and cover the pork with the paste.

  4. Slow-cook the pork for seven hours.

  5. The meat should be tender and fall off the bone. Remove the bone and any fat/rind that you do not want.

  6. Take a fork and gently shred any big pieces of meat.

  7. Serve in Keto-friendly buns as sliders or serve on cauliflower rice or a pizza topping. Yummy!

This is a cheap and comforting meal that the Whanau can enjoy. They won't even know it's keto! Utilize that slow cooker by making an extra batch to keep in the freezer.
