Keto Fake Potato Salad

Keto low-carb recipe

Ingredients

Makes 4 servings as main meals or 6 servings as side dishes.

  • 1 medium cauliflower or equivalent of frozen cauliflower, cooked

  • 4 boiled eggs

  • 3 rashers of cooked bacon

  • half a C of grated cheese

  • a quarter tsp of mustard powder

  • a quarter tsp of onion powder

  • a quarter tsp of garlic powder

  • 2 TBSP of mayonnaise

  • half a TBSP of mustard

Method

  1. Chop cooked cauliflower into bite-sized pieces.

  2. Shell the boiled eggs. Chop the boiled eggs into small pieces, the same size as an egg salad. 

  3. Dice the cooked bacon into small pieces. 

  4. Add the chopped boiled egg, bacon and cauliflower to a bowl.

  5. Add grated cheese to the boiled egg, bacon and cauliflower.

  6.  Mix the mayonnaise, mustard, garlic powder, mustard powder and onion powder in a separate bowl.

  7. Add the mayonnaise sauce mixture to the cauliflower bowl and mix. The cauliflower should be coated in the sauce.

This tasty recipe can be eaten hot or cold. Enjoy as a meal for dinner or lunch or as a side to your main meal.
