Keto Caramel Brownie Slice

You will fall in love with this Keto caramel brownie slice with a gooey caramel centre, chocolate topping, and a soft brownie base. You must be willing to share with the rest of your household whether they live keto or not!

Keto Caramel Brownie Slice

Low carb, Keto, sugar free recipe for fast and healthy weightloss

Brownie base:

  • 1/2 c almond meal

  • 1/4 c cocoa powder or keto-drinking chocolate

  • 1/4 c erythritol or your choice of keto sweetener

  • 1 tsp baking powder

  • 10 T melted butter

  • 3 eggs

  • 1t vanilla


  • 1 C of cream

  • 250 g of butter cut into cubes

  • 4 Tbsp of keto-friendly sweetener

  • 1 tsp of vanilla

Chocolate topping:

  • 2.5 Tbsp of coconut oil

  • 200 g of keto-friendly chocolate

Brownie base:

  1. Preheat oven to 160c bake or fan bake and line a baking pan.

  2. Place all brownie base ingredients into a mixer or kitchen whizz and mix until there are no lumps.

  3. Put the mixture into your lined baking pan.

  4. Bake at 160c for 15-20 minutes.

  5. Make yourself a coffee and enjoy!

  6. Take the brownie out of the oven and leave to cool while you make the other layers.

Caramel filling:

  1. Add all of the caramel ingredients into a microwave-safe bowl.

  2. Heat the mixture in the microwave in two-minute increments. After every two minutes of heating in the microwave, take the bowl out and give it a good stir. Care needs to be given as the mixture will start to boil and steam. Do this for 10-15 minutes or until the mixture starts to thicken and turn brown.

  3. For the next 5 minutes of cooking, change the time in the microwave to one-minute increments. Stir the mixture after each minute.

  4. Your mixture should be thick and a light brown/caramel colour. You need to pay very close attention as the mixture can burn. 

  5. Once your mixture is thick and turned to caramel pour it over your brownie base.

  6. Place into the fridge for a few hours to set and harden.

Keto-friendly caramel is a little fiddly to make but once you get the hang of it, you will become a pro! The final product is totally worth it.

Chocolate topping:

  1. Add keto-friendly chocolate and coconut oil to a microwave save bowl

  2. Melt the keto-friendly chocolate and coconut oil on high for one minute and ten seconds. 

  3. Give your mixture a good stir to help combine.

  4. Pour the mixture over the top of your caramel layer and use a knife or spatula to spread over the caramel, as you would with icing.

  5. Let it cool down and place it into the fridge to set

  6. Cut the slice into pieces.

Keep the slice in a container in the fridge.
